Vegan Pumpkin Pie Bread

Who doesn’t like easy (and vegan) when it comes to baked goodies?


1 (15 oz.) can of pumpkin
1 box Baker’s Choice pumkin Square mix (or equivalent)
¼ cup olive oil
Dashes of cinnamon and nutmeg (to taste)

Preheat oven to 350. Grease (I used olive oil) and flour a bread pan. Mix the ingredients (there are two separate packets in the square mix, toss them right in together!) Bake for about 80 minutes. Cool in pan for 10 minutes then transfer to a plate to finish cooling. Enjoy! It’s like pumpkin pie, but in a bread!

    1. That’s okay Yvonna! You can substitute 2 cups of real pumpkin. Fresh anything can be substituted for any of the can things I use…I aim for quick easy recipes that people on the go can make who maybe don’t have the extra time to make everything fresh. The whole point of my recipes is that they are vegan, meaning that they are meat, dairy and egg free.
